ICEBOX COOKIES

INGREDIENTS

1 c all-purpose flour
1/4 tsp baking soda
1/8 tsp salt
4 tbsp stick margarine; softened
2/3 c granulated sugar
1 tsp vanilla extract
1 lg egg white
1 cooking spray

DIRECTIONS
  1. Combine the first 3 ingredients in a bowl, and set aside. Beat margarine
    at medium speed of a mixer until light and fluffy. Gradually add sugar,
    beating at medium speed of a mixer until well-blended. Add vanilla and egg
    white, and beat well. Add flour mixture, and stir until well-blended.
  2. Place dough between parchment paper and roll out. Refrigerate for several hours or overnight
  3. Preheat oven to 350.
  4. Using cookie cutters, cut chilled dough and bake in oven for 8 - 10 minutes.
